Ginger Coconut Slice Recipe

I have taken this Recipe from the 'Cookery book of good and tried recipes'
Published in 1993 for a hometown Town Church fundraising effort. I remember that My Dad gave me this book for Christmas and my Sister had chosen it. In 1993 I was 21 though I guess if it was a Christmas gift I was actually 22. :) 

So yesterday when I wanted an old fashioned Slice recipe this book presented itself as a Gem, its full of the church ladies fall back, go to recipes of the day, I suspect many of them known by heart. It has all of those tasty treats that you used to get at School fetes and cake stalls. I wanted a quick and easy for afternoon tea guests so chose Ginger Coconut slice.


Ingredients :- 

2oz butter or margarine ( modern about 56g )
1 tbsp Golden Syrup
1 Cup SR Flour
1 1/2 tsp Ground Ginger
1/2 cup sugar
1/2 cup coconut
1 egg

Notes:- I used Brown Sugar, Butter and split the flour 1/2 wholemeal 1/2 White

Method :-
Melt margarine and syrup over low heat. Soft Flour & Ginger, combine with sugar, Coconut and lightly beaten egg. Add melted Margarine and Syrup. When combine press into a greased lamington tin. Bake in a moderate oven for 25 to 30 minutes. When cool ice with lemon icing and cut into squares.
Notes :- I melted in the microwave using the mixing bowl and then added all the other ingredients to this - much less washing up ; ) pressing it down required baking paper laid on top as it was super sticky. 


Lemon icing :- 

1 cup icing Sugar
1oz margarine/butter
1 tsp hot water
2 tsps lemon juice
1 tsp grated lemon rind.
My method :- Soften the butter, add everything else to it  mix it all together. Add the hot water last which you may need more of.


Yummy! A really simple slice with nice flavours, nothing fancy but definitely more-ish! Be sure to let me know if you try it.

  1. Ooh, this sounds nice. I do love the combination of ginger and coconut and well you can't go wrong with a lemon icing :)
    We have been making the condensed milk bikkies that you linked to...it's great having a few rolls in the freezer. I've even given the link to friends when they have commented on how tasty they are.

    Hubby loves ginger (and I have some crystalised ginger that I could add too), might have to give this a whirl later in the week.
