I've been thinking a lot lately about what I eat and how it effects me. Mind/ body connections and general well being. This has led to me reading a lot of whole food, clean eating and Paleo based blogs and articles and I've made some small changes to my diet. I have found so many delicious Almond Meal based options that I decided to start playing with it for myself.
I adapted this recipe by taking out half the flour and subbing with Almond meal and increasing the coconut content. The cooking time had to be adapted slightly too.
125g melted butter
3/4 cup wholemeal flour
3/4 cup Almond meal
3/4 cup desiccated coconut ( I use organic )
1 cup Brown sugar
2 tbsp cocoa
1 tsp vanilla
Mix it all up. Press it into a lined slice tin ( it will be quite sticky and a bit hard to manipulate. )
I baked it for 18 mins at 180 and left it sitting in the oven for another 7 minutes after I had turned it off .
When it was coolish I spread melted chocolate over the top instead of using icing.
Making this change really added to the delicious factor and changed the consistency to something more like a brownie. I think I could have gone with less butter too. All in all I'm feeling good about it for my first attempt at using this ingredient. Let me know if you try it. x
