Peanut Butter Cookies Recipe


These are Oh so very good! I originally came by this recipe through my twitter friend Katrina Higham.
These have the best old fashioned melt in your mouth consistency and I don't bake them very often as I can not stop at one.

Old fashioned Peanut Butter cookies.

Ingredients

125 g butter
1tsp Vanilla
1/2 tsp finely grated lemon rind
1/3 cup sugar
1/3 cup brown sugar
1/3 cup Peanut Butter
1 1/4 cups Plain Flour ( I use wholemeal)
1 tsp Bicarb Soda
Pinch of Salt

Method

Cream the butter, vanilla, peanut butter, lemon rind and sugars. Fold in the Flour, Bicarb and salt.
Roll into small balls and flatten with a fork. Bake these at 180 degrees for 10 to 15 minutes.


The addition of the citrus hit after the initial peanut butter flavour you taste as you bite into these is what makes them a winner for me. An unlikely pairing makes a very winning combo! This recipe makes about 2 dozen cookies.

  3. Oh they do sound delicious. I like the idea of the lemon too. I currently make a peanut butter & chocolate biscuit, and they are wickedly addictive too. I'm sure yours would be so much better for me (ha!)
