With the price of Bananas these days we don't want to waste a speck and as our whole family was away on the weekend these guys got a little past their best before. So easy Banana Muffins were on the agenda.
This Banana Muffin Recipe is really quick and very Easy!
Ingredients
2 ripe ( overripe ) bananas
1 Cup milk
1 Egg
2 tablespoons oil
1 teaspoon vanilla
2 1/2 cups SR Flour
3/4 cup Brown Sugar
Pop Bananas, Milk, Egg, Oil and Vanilla into the blender and make a Smoothie ;)

Put your flour and Brown Sugar into a bowl and then combine the wet and dry ingredients until just mixed.
Fill your muffin pans quite full, these rise really well and turn out as BIG muffins.

Bake at 180c for about 20 minutes and you have 12 big hearty Banana Muffins.
I also added some choc chips in at the mixing stage. my Kids and Mr love these!

I think you could also add some coconut or nuts to take it in a different direction.
Substitute the oil with Apple Puree ... lots of options.

ReplyDeleteOh, the days of cheap bananas! Still buying them because my three year old would just die without her bananas...but I joke about the banana 'budget'...it's like a whole other shopping bill.
