Warm pikelets on a cold grey day for afternoon tea.
Pikelet Recipe :-
1 cup SR Flour
1/4 cup caster sugar
1/4 tsp bicarb
1 Egg
3/4 cup milk
1 tsp white vinegar
15g melted butter
Sift dry ingredients into a bowl.
Combine vinegar, milk and egg and slowly add to flour mixture until it is all incorporated and batter is smooth then add melted butter.
Cook spoonfuls in an electric fry pan set to medium heat, lightly grease pan with butter. When many bubbles appear on the surface of each pikelet flip and cook the other side.
these disappear fast here so it may be worth whipping up a double batch.

mmm mmmm i love pikelets although as i make about 100 of them every day the last thing i want to make on the w/e is pikelets. Maybe someone will make them for me for a change.
