Custard cream biscuits

This morning I went to the monthly P&C morning tea and we learned how to make rice paper rolls, that ended up being my breakfast as I hadn't actually planned on going but my neighbours little girl said she wanted me to go to morning tea with them and I didn't really have any reason not to. :)
When I came home I made the filling and sandwiched together the custard cream biscuits I baked yesterday. the recipe was taken from the custard box.


Ingredients:-

185g butter
1/2 cup caster sugar
2 eggs
2 cups SR flour 
1/2 cup Custard powder

Method:-

Cream butter and sugar until light and fluffy add eggs one at a time mixing well after each addition. Gradually fold in the sifted flour and custard powder. ( I used wholemeal so didn't bother sifting ) Spoon out 40 teaspoons of mix onto baking trays and press down with a fork, bake at 180 for 10 to 15 mins. Cool on wire rack. 

Filling:-

125g butter
1 cup icing sugar
2 tbsp custard powder
1 tbsp orange juice
2 tbsp orange zest.

Cream butter sugar and custard powder add orange rind and juice and beat until smooth.
I used the juice of half a blood orange and the rind of a regular orange, no measuring I find the colour of the blood oranges entrancing.


Yum, yum, yum.
if I had rice paper rolls for breakfast its Ok then to have custard creams for lunch ... right?
I'm expecting my Boys will love these, little miss is not so fussed on home baked biscuits. Hopefully there will be some left to take over to the P&C barbecue tomorrow. I'll be glad when this election is done I've had political junk mail up to my ears I'm not sure if its just like that here in Canberra or everywhere in Australia?
