Morning Tea in the sun


On gorgeous Days like today, when I have finished a few morning tasks I head out to the veranda with my knitting and morning tea, where I can enjoy the sunshine and fresh air while being serenaded by the Currawongs and watching magpies fossick. Its blissful.


Yesterday I baked and I was looking forward to morning Tea today as it was Ginger Coconut Slice! I love a good ginger and lemon combo in baking, this one falls a little short in the ginger dept, for me but its actually the lemon icing I am a big sucker for and I think this is still quite tasty nonetheless.

Ingredients :- 


2oz butter or margarine ( modern about 56g )
1 tbsp Golden Syrup
1 Cup SR Flour
1 1/2 tsp Ground Ginger
1/2 cup sugar
1/2 cup coconut
1 egg

I used raw sugar and guess-timated the golden syrup

Method :-


Melt margarine and syrup over low heat. Soft Flour & Ginger, combine with sugar, Coconut and lightly beaten egg. Add melted Margarine and Syrup. When combined press into a greased slice tin. Bake in a moderate oven for 25 to 30 minutes. When cool ice with lemon icing and cut into squares.

 I melted the butter and Syrup in the microwave using the mixing bowl and then added all the other ingredients to this.

Lemon icing :- 


1 cup icing Sugar
1oz margarine/butter
1 tsp hot water
2 tsps lemon juice
1 tsp grated lemon rind.

My version :- Some icing sugar, a little butter, juice of half a lemon, some finely grated lemon rind and a bit of hot water at the end to thin it out a little. I made the icing and put it on the slice the sprinkled the rind over and swirled it in the back of a spoon.
