Orange Cake Recipe

When ever I make orange Cake I am always reminded of when I was a young girl and my Dad loved Orange cake a lot. Today I'm sharing my go to Easy and Delicious Orange cake Recipe.

Orange cake

Ingredients
125g Softened Butter
3/4 Cup caster Sugar
1 1/2 Cups SR Flour
1/4 cup of milk
1/4 cup of orange juice
2 eggs
1 tbsp finely grated orange rind.

Pre heat your oven to 180 deg and prepare your chosen pan, I typically make this in a loaf tin and I grease and line with baking paper.

Put all the ingredients into the bowl and mix.
This is what the recipe instructs though I personally take care to not let the orange juice and milk mix as in my mind this is just wrong. 

Mix well until all ingredients are thoroughly combined 3 to 5 mins should do it.
Pour into your tin and bake for 35 minutes.
Turn out to cool on a wire rack.

Icing
1 1/2 cups sifted icing sugar
1/3 cup softened butter
I teaspoon finely grated zest ( and more to sprinkle on top if desired )
Orange juice.
Mix all ingredients well and add orange juice until desired consistency is reached around 1 tbsp does it for me. You may need more or less.

I tried this icing for the first time recently and think next time I'll reduce some or all of the butter and substitute with cream cheese for a bit of extra zing. 

When the cake is iced take a break and enjoy some with a Cuppa.

  2. Looks divine :) I may just have to make that this weekend.

    I usually try to avoid letting citrus and milk touch because in my mind it automatically makes a big gloopy mess (even if it actually doesn't).

    I'm pretty lazy about it and would throw it all into together...it gets baked so all will be good- lol!
