A taste of Summer.



Today I made zucchini pickles. 1kg Zucchini equalled three of these jars.
One for my neighbour who gave us the Zuc's and two for us. The recipe is ...

  • 1 kg zucchini
  • 2 large onions
  • 1 small capsicum (red looks attractive)
  • ¼ cup salt
  • 2 cups sugar
  • 2 cups white vinegar
  • 2 teaspoons mustard powder
  • 2 teaspoons turmeric


Method:
Chop the zucchini, onion and capsicum finely. Add the salt and leave to stand for two hours or more. Drain.

Combine the sugar, vinegar, mustard powder and turmeric. Place the vegetable mixture into this, bring to the boil, then cook for 20 minutes.

If you think it necessary at this stage, the pickle can be thickened with one dessertspoon of cornflour mixed to a paste with a little white vinegar.

It was my first time making pickles of any kind. I used Yellow capsicum as red was not available to me and I wanted contrast for the green. I also subbed some of the mustard powder for mustard seeds as I like the look of the seeds in pickles. Next up I think will be some tomato sauce. Its a bowl of my Romas you see sitting there ripening on the table and My neighbour gave me a few of his Grosse Lisse too. He also gave me a beautiful head of garlic and 5 small corn cobs.
I'm doing quite well with my new shopping routine and not wasting as much food. Having a neighbour supplying us with lots of fresh Veg is also very helpful. There's not as much going into the compost these days though which is better value for us : ) I get the best feelings of kitchen pride and self satisfaction when I preserve or use something that would have otherwise been wasted. Its the best Buzz.
I have yet to share how things are working out with my new planner etc as it has been two weeks since I ordered and ... the refills have not yet arrived. I was told they had been sent 10 days ago from Melbourne ??? I downloaded some templates from Sunny Mummy today that I'll use in the mean time or even better as a replacement. I hate giving my money to someone with bad customer service practices, so hope to get a refund from the company that is now not answering emails and has not sent my goods ...

  2. I agree it feels so good openeing a jar of pickles or chutney or jam or anything that you have made yourself and its preservative free.This must be my only favourite thing about summer, the fruit and vegetables that i can turn into jars of something.

  4. oh Tammy, I was just saying to my Mum yesterday that we'd need to find a good pickle recipe this year to help use up all the home grown zucchinis that will start flowing soon. Thankyou so much for posting this recipe - saving it in my fav. folder now!!

    Great pickles recipe and seems so much simpler than mine. Would you mind sharing your ToM Sauce recipe when you make it. It's great to use a tried and true recipe rather than find one in a cook book and then find it's not so good.
